Broccosaurus Cutouts

12 c Flour
1 ts Baking powder
1/2 ts Salt
10 oz Frozen chopped broccoli; thawed and drained
1 Egg
3/4 c Milk
1 c Rice; cooked
1 c Cheddar cheese; shredded

Heat oven to 350 degrees. Lightly grease a baking sheet with nonstick cooking spray. In medium bowl, using wire whisk, stir together flour, baking powder, and salt; set aside. In bowl of food processor fitted with metal blade, process chopped broccoli and egg until smooth. Add milk and process 1 minute. Transfer broccoli mixture to bowl containing flour mixture. Add rice and cheese; stir ingredients together, mixing well.

Spoon mixture onto baking sheet. Using a rubber spatula, spread mixture into about 10 x 13 rectangle. Bake 30 minutes or until set.

Cool on wire rack 10 minutes. Gently slide a metal spatula underneath layer to loosen. When cooled, slide onto work surface and cut out dinosaur (or any favorite) shapes using a cookie cutter. To freeze, wrap tightly in plastic wrap; reheat in microwave.
